Corned beef is brisket cured in a salt solution, often seasoned with peppercorn, coriander and mustard seeds. It can be canned, found in some delis or you can make it yourself. Corned beef is commonly served with cabbage on St. Patrick’s Day in the U.S. However, it can be enjoyed in many forms and for all meals. If you’re looking for an alternative way to enjoy it, consider this one-pot crispy corned beef hash.

Where did corned beef originate? 

Corned beef is a popular dish to indulge in on St. Patrick’s Day, however, you might be surprised to know the food isn’t technically Irish. According to the History Channel, celebrating the holiday with corned beef started at the turn of the 20th century in New York City. Irish immigrants living on the Lower East Side opted for corned beef as an alternative to Irish bacon, something they learned about from their Jewish neighbors.

Easy corned beef hash recipe 

You can make this crispy corned beef hash with very little prep work by buying a bag of frozen Potatoes O’Brien and using canned or deli-prepared corned beef. To make a crispy corned beef hash breakfast: 

  1. Start with a large, oven-safe pan with enough surface area for the potatoes. 
  2. Sauté the potatoes in the pan. You want them to have contact with the surface so they can crisp up. The trick is to let them sizzle and leave them alone while they cook. Let them develop a crust on one side before flipping and letting the other side crisp up. Remember: color is flavor when it comes to corned beef hash. 
  3. Add in the corned beef and let it cook together. 
  4. Once that’s cooked, create small wells in the potato and corned beef mix to add your eggs. 
  5. Crack the eggs into the wells, season them, and put the pan in the oven until the eggs are cooked to your liking. You can also prepare the eggs in your preferred style on the side.
